Crock Pot Chicken Curry and Vegetables

There's nothing better than throwing some ingredients in a crockpot and leaving it alone for 5 hours, just to come home to a healthy delicious meal and a nice smelling kitchen.  Curry is a wonderful Indian dish that brings incredible nutritional value to the table.

4-5 hours

Ready In:
5 hours

Ingredients:

  • 1 lbs chicken breast (cubed)
  • 1 lbs chicken thighs (cubed)
  • 3 celery stalks (diced)
  • 1 onion (diced)
  • 1 can coconut milk
  • 3-4 tablespoon(s) curry powder
  • cayenne pepper (to taste)
  • 2 teaspoon(s) fresh ginger (grated)
  • salt and pepper (to taste)
  • 1 squash (cubed)
  • 1 large sweet potato (cubed)

Instructions:

Mix together coconut milk with spices, onion and celery. Add chicken and vegetables to slow cooker and pour curry sauce on top.

Cook on low for 4 – 5 hours.
