Garlicky Spinach and Tomato Scramble

Eggs are incredibly nutritious and not just a breakfast food.  This recipe is simple and easy to adapt if you have leftover veggies you need to use up.  Throw them in the skillet and enjoy with a side of fresh berries.

10 minutes

Ready In:
15 minutes

Ingredients:

  • 4 eggs
  • 6 cup(s) fresh spinach
  • 6 clove(s) garlic (chopped)
  • 1/2 teaspoon(s) olive oil
  • 1/4 cup(s) chicken broth
  • 2 cup(s) cherry tomatoes
  • 1/2 cup(s) your favorite clean salsa

Instructions:

1. Saute the garlic in the olive oil over low to medium heat.

2. Add the spinach and chicken broth. Cook until the spinach is completely wilted.

3. Stir in the eggs and scramble everything together until the eggs are completely cooked.

4. Top with cherry tomatoes and salsa.
