Microwaved Eggs

Here's a quick lunch favorite. After many failed attempts, I've figured a way to microwave eggs and look forward to it. Going slowly and step by step I can keep the yolks intake and cook them gently, having them come out a bit softer than hard boiled.

Prep Time:
3 minutes

Cook Time:
3 minutes

Ready In:
5 minutes

Ingredients:

  • Eggs (Cracked with yolk kept whole if possible)
  • Bacon (Cooked and minced)
  • Salsa (Choose your favorite. Find one with no added sweeteners)

Instructions:

1. Crack 3-4 eggs into Pyrex bowl

2. Add 3-4 pieces of minced cooked bacon (Image 1)

3. Place covered in microwave and cook on high for 45-60 seconds (the bigger the microwave the less time)

4. Some of the egg white has cooked along the edge of the bowl (Image 2). With a fork move this to the middle as much as possible. Keep yolks intact.

5. Cook again for 45-60 seconds and repeat step 4

6. Each time, try to get any liquid egg to the sides to allow them to cook. You may need one more cycle.

7. Let cool, add salsa

8. Enjoy
