On busy weeknights, we tend to gravitate toward the one-pot meals. The less cleanup required, the better. This is a recipe to keep in your back pocket on nights when you're too tired to cook and the pizza delivery guy is on standby.

Ingredients:
- 1 lbs ground beef
- 1 head(s) cauliflower (riced)
- 16 oz pasta sauce (check labels for weird ingredients)
- 1-2 tablespoon(s) capers or sliced olives for garnish
Instructions:
- Brown the meat in a large skillet over medium-high heat. You may want to drain the fat if the meat’s not grass fed.
- Add the riced cauliflower and pasta sauce.
- Simmer for 5 minutes or until the cauliflower is tender.
- Garnish with capers or olives.
