A delicious cold-weather dinner to warm you up. We like to steam broccoli or grill a bunch of asparagus to have along with it.

Ingredients:
- 4 bone-in center cut pork chops
- Salt and pepper
- 1 tablespoon(s) olive oil
- 1 onion (sliced)
- 3 clove(s) garlic (minced)
- 8 oz white button mushrooms
- 8 oz baby bella mushrooms (crimini)
- 1/2 teaspoon(s) dried rosemary
- 1/2 cup(s) chicken broth or stock
Instructions:
- 1. Sprinkle pork chops with salt and pepper. Heat the oil in a large pan over medium-high heat. Add pork chops and cook for 3 minutes on each side; remove from pan and set aside.
- 2. Add the onions and garlic to the pan. Reduce the heat to medium and cook until softened, stirring occasionally, until softened, about 5 minutes. Add the mushrooms and the rosemary. Cook until the mushrooms are tender, about 7 minutes, stirring occasionally.
- 3. Add the broth and heat to simmering. Add the pork. Cover, reduce heat and simmer for 8 minutes or until pork is cooked through. Salt and pepper to taste. Serve pork topped with mushroom mixture.
