Powerhouse Salad for One

This is one filling and delicious salad, packed with good fats, protein and nutrients.  This is one of my favorite on-the-go lunches.

Ingredients:

  • 2 cup(s) mixed greens, spinach or any lettuce you prefer
  • 2 tablespoon(s) raw walnuts (chopped)
  • 1/2 avocado
  • 1 tablespoon(s) sunflower seeds
  • 4 oz grilled chicken
  • 1 tablespoon(s) extra-virgin olive oil
  • 1 tablespoon(s) balsamic vinegar

Instructions:

Combine all ingredients and toss with olive oil and balsamic vinegar.  Enjoy!
