Salmon Wasabi Burgers

These burgers bring the heat. If you don’t like spicy food, omit the wasabi powder altogether.  These burgers need no condiments and we like to serve them on a bed of lettuce or Asian slaw.

Ingredients:

  • 1 lbs skinless salmon filet
  • 1 tablespoon(s) fresh ginger (peeled and minced)
  • 1/4 cup(s) scallions (finely chopped)
  • 1/4 cup(s) cilantro (minced)
  • 2 large eggs
  • 1 tablespoon(s) freshly squeezed lime juice
  • 1/2 cup(s) blanched almond flour
  • 1 teaspoon(s) sea salt
  • 1/8 cup(s) wasabi powder
  • 1 tablespoon(s) water
  • coconut oil for frying

Instructions:

  1. Rinse salmon, pat dry, and cut into 1/4 inch cubes.
  2. In a large bowl, combine salmon, ginger, scallions, cilantro, eggs, lime juice, almond flour, and salt
  3. In a small bowl, combine wasabi powder and water to form a paste
  4. Mix wasabi paste into salmon mixture
  5. Form batter into 2-inch patties with your hands
  6. Heat oil in a large skillet over medium high heat
  7. Sauté patties in batches until golden brown, 6 to 8 minutes per side
  8. Serve
