Sausage and Kale Soup

An easy cool weather recipe for those nights when you want something warm and hearty. If you've had a hard time getting kale into your diet, this is a great recipe to introduce it.  The other flavors balance the kale and provide a mild but rich flavor.

Ingredients:

  • 4 fully cooked pork sausages (Italian or brat style)
  • 6 oz baby bella mushrooms (sliced)
  • 2 cup(s) kale (chopped)
  • 1/2 cup(s) onion (chopped)
  • 1 tablespoon(s) olive oil or grass-fed butter
  • 2 teaspoon(s) garlic (minced)
  • 1 teaspoon(s) dried oregano
  • 1/2 teaspoon(s) paprika
  • 6 cup(s) chicken broth

Instructions:

  1. Melt the butter in a pot over medium heat. Add the onion, mushrooms, and garlic. Saute until soft and golden, roughly 6-8 minutes.
  2. Add the sausage and turn to brown evenly. Sprinkle in the oregano and paprika.

  3. Pour in the chicken broth and simmer for 10 minutes. Add the kale and cook until it's completely wilted, which will take just 2-5 minutes.
  4. Salt and pepper to taste before serving with freshly grated parmesan cheese and sliced avocado.


    Serving Size: Makes 4, 2-cup servings
