Sausage and Veggies

This is one of my go-to make-ahead breakfasts because I can cook a big batch at the beginning of the week and I've got a healthy meal ready to warm up each morning. Feel free to use whatever vegetables you'd like int his recipe. I love the combination of green pepper, onion and mushrooms but asparagus,

Prep Time:
10 minutes

Cook Time:
5 minutes

Ready In:
15 minutes

Ingredients:

  • 1 lbs grass-fed spicy sausage
  • 1 green pepper (diced)
  • 1 small onion (diced)
  • 1 cup(s) mushrooms (chopped)
  • 1 tablespoon(s) grass-fed butter or coconut oil

Instructions:

Melt butter or coconut oil in a large frying pan over medium heat. Saute vegetables until they soften. Transfer vegetable mixture to a glass container. Cook spicy sausage in saucepan until cooked through. Add the vegetable mixture cook for 3-5 more minutes. Season with salt and pepper.

Optional: Top with fried egg
