This is one of my go-to make-ahead breakfasts because I can cook a big batch at the beginning of the week and I've got a healthy meal ready to warm up each morning. Ingredients:
- 1 lbs grass-fed spicy sausage
- 1 green pepper (diced)
- 1 small onion (diced)
- 1 cup(s) mushrooms (chopped)
- 1 tablespoon(s) grass-fed butter or coconut oil
Instructions:
Melt butter or coconut oil in a large frying pan over medium heat. Saute vegetables until they soften. Transfer vegetable mixture to a glass container. Cook spicy sausage in saucepan until cooked through. Add the vegetable mixture cook for 3-5 more minutes. Season with salt and pepper.
Optional: Top with fried egg
