Ingredients:
- 2-3 large sweet potatoes (washed and sliced into rounds, chunks, or French fry-like pieces)
- extra-virgin olive oil
- optional seasonings: salt, pepper, cinnamon, garlic powder
Instructions:
Preheat oven to 375 degrees.
Place sliced potatoes in a large bowl. Toss to coat with olive oil and seasonings of your choice. Pour onto baking sheet and roast in oven for 45 min or until lightly browned and crispy. You may want to stir halfway through cooking time to ensure even cooking.
