With very few ingredients and a short amount of cooking time, this is a great recipe to have on hand. Combine this with a spinach salad or freshly steamed broccoli. The leftovers make for a great salad the next day. If possible, use organic free-range chicken and raw walnuts.

Ingredients:
- 4 skinless boneless organic free-range chicken breasts
- 1 cup(s) walnuts (finely chopped)
- 2 organic eggs
- 1 1/2 lbs broccoli
- 3 tablespoon(s) grass-fed butter
- 1/2 lemon (juice of)
- salt and pepper
Instructions:
1. Preheat oven to 350 degrees
2. Place eggs into a mixing bowl and whisk
3. Place walnuts into a separate bowl
4. Dip each chicken breast in the egg mixture then in the walnuts bowl to coat the chicken
5. Place chicken in a baking disk and bake for 25 min. Serve and Enjoy!
6. While the chicken is baking, trim the broccoli into large florets.
7. Place the broccoli in a steaming basket over boiling water; cover and steam for 3 minutes.
8. Remove the lid for a moment, then cook, partially covered, until the stems are tender-firm, another 8-10 minutes.
9. Remove to a platter; season with salt and pepper, the butter, and the lemon juice.
