Whole Roasted Chicken

A roasted chicken is so versatile.  Eat fresh from the oven or chop it up and make it into a chicken salad or fajitas.  There are so many options.  Make this mid-week so you have plenty of leftovers to get you through several more meals. 

Prep Time:
5 minutes

Cook Time:
60 minutes

Ready In:
1 hour

Ingredients:

  • 1 whole chicken, 4-5 pounds
  • 2 teaspoon(s) thyme
  • 1/2 cup(s) dijon mustard
  • 1 tablespoon(s) coconut oil
  • salt and pepper to taste

Instructions:

1. Preheat oven to 450 degrees

2. Pat down the chicken dry with a paper towel

3. Coat the chicken with coconut oil, salt and pepper.

4. Spread the dijon mustard all over the chicken and add thyme

5. Roast for about 60 min or until browned.

6. Once cooked remove and let stand for 10 min.  Serve and Enjoy!
