This is a fresh and wonderful combination of flavors. It goes well with any entree, especialy in the summertime if you have fresh tomatoes on hand. Just chop a large tomato into bite-size pieces and add at the end.

Ingredients:
- 1 lbs asparagus (ends trimmed)
- 1 tablespoon(s) red onion (minced)
- 1 tablespoon(s) extra virgin olive oil
- 4 teaspoon(s) balsamic vinegar
- 1 clove(s) garlic (minced)
- sea salt (to taste (optional))
- freshly ground pepper (to taste)
Instructions:
Bring a medium pot of water to boil.
Add asparagus and boil 3 min. Drain and rinse under cold water immediately. Dry thoroughly.
Mix all other ingredients together. Toss asparagus with balsamic mixture.
Serve chilled or at room temperature.
