  • Chicken Enchilada Casserole

    Who said you can't eat casserole on a healthy diet? This is a cleaned up version of a traditional chicken enchilada casserole.  

  • Chili Verde

    This is a delicious Mexican dish with plenty of flavor.  Top with fresh tomatoes, avocado slices and cilantro.  You can prepare the soup ahead of time and keep warm in the crock pot for a later meal. 

  • Pesto Chicken Skewers

    The chicken is best when it has time to marinade in the pesto.  If you don't have time, grill the chicken skewers without the pesto.  Once they're done cooking, top with the pesto.

    Kale is a nutritional powerhouse, loaded with vitamins.  Saute any other vegetables you have on hand with the kale.  This side dish is simple, quick and incredibly nutritious.

  • Pepper Steak

    A simple but delicious way to prepare a nice grass-fed steak.  This recipe makes enough for dinner for two plus lunch leftovers.  Enjoy with sauteed kale or whipped sweet potatoes.
