Ingredients:
- 1 lbs pastured, MSG/nitrate-free ground sausage
- 1 white onion (chopped)
- 1 green bell pepper (chopped)
- 8-10 farm-fresh eggs
- salt and pepper
Instructions:
Preheat oven to 350 degrees.
Brown sausage, onion, and bell pepper in skillet until sausage is crumbled and cooked through. While sausage is cooking, whisk eggs in large bowl. Add salt and pepper to taste.
Grease 9x13” pan with butter or coconut oil. Spread ½ cooked sausage mixture in bottom of pan, pour whisked eggs over the top. Bake at 350 for 25 minutes or until eggs are set. Cool and refrigerate. Through the week, cut a square and heat in the microwave for a quick breakfast.
*Place remaining ½ of the sausage mixture in a container and keep in fridge for use in Pizza “Pasta” Recipe
