Fish Tacos

A white flaky fish is perfect for this meal.  Pair the tacos with fresh coleslaw and berries.

Ingredients:

  • 1 1/2-2 lbs halibut (skin removed and cut into bite size pieces)
  • 2 limes (juiced)
  • 2-3 garlic cloves
  • 1 jalapeno (sliced, seeds removed (optional))
  • 1-2 teaspoon(s) cumin
  • 1 teaspoon(s) salt
  • coconut oil
  • romaine lettuce leaves
  • avocado (sliced)
  • red onion (diced)
  • fresh cilantro (chopped)

Instructions:

Place fish, lime juice, garlic, jalapeno, cumin, and salt in a bowl and toss to coat.  Let marinate for about 10 minutes.

Heat coconut oil in large skillet and add fish mixture, and sauté until cooked through (the fish will turn opaque and flake when tested with a fork).

Use a lettuce leaf as the shell for your fish, avocado, red onion and cilantro.
