When in doubt, grill up leftover vegetables. This is a great end of the week recipe. Use whatever vegetables you have in your refrigerator.

Ingredients:
- onions, bell peppers and mushrooms
- coconut oil (melted)
- salt and pepper
Instructions:
Melt coconut oil and toss with veggies, salt, and pepper in a large bowl.
Heat outdoor grill over medium-high heat. Place veggies in a grill basket and place on hot grill. Grill 10-15 minutes, or until veggies and lightly browned, crisp, and tender, tossing 1-2 times while cooking.
