Rosemary Apple Roast Chicken

A simple, "prep and leave" kind of meal.  The result is an aromatic, Autumn dinner.  This dish combines well with roasted vegetables and a green salad.

1 hour 40 minutes


  • 1 whole free-range chicken (2-3 lbs)
  • 1/4 cup(s) extra-virgin olive oil
  • 1/4 cup(s) balsamic vinegar
  • 1 teaspoon(s) salt
  • 4 apples (cored and sliced)
  • 4 sprig rosemary


Rinse the chicken, pat dry with a paper towel and place in a 9x13” baking dish.

Drizzle with oil and vinegar and sprinkle with salt.

Arrange the apples and rosemary around the chicken in the baking dish.

Bake at 350° for 90 minutes, until browned on the outside and internal temperature reaches 165 degrees.
