Almond Crusted Salmon

Almond meal is a great breading substitute.  It can be used to coat chicken or any type of fish.  Use wild-caught salmon whenever possible.

Ingredients:

  • 3/4 cup(s) almond meal
  • 1/2 cup(s) dried unsweetened coconut
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper
  • 4 wild-caught salmon filets
  • coconut oil

Instructions:

Heat oven to 400 degrees.

Mix almond meal, coconut, salt, and pepper on a plate. Coat each salmon fillet with the almond mixture, pressing the mixture into the salmon.

Heat large skillet over medium high heat and add coconut oil. Place each salmon fillet, almond mix-side down, in the skillet and sear 3-4 minutes, or until the almond crust is lightly browned.

Transfer the fillets to a baking sheet and place in oven, about 5 minutes or until the salmon is cooked through and flakes when tested with a fork.
