Broccoli Salad

If you have time to let the dressing marinade the broccoli, let it! The extra time will create a really incredible flavor.

Ingredients:

  • 2/3 cup(s) paleo mayonaise
  • 2 tablespoon(s) honey
  • 1 tablespoon(s) Balsamic vinegar
  • 4 cup(s) broccoli florets
  • 1/2 cup(s) raisins
  • 1/2 cup(s) slivered almonds
  • 1/4 cup(s) red onion (diced)

Instructions:

  1. Make the dressing: Combine your favorite paleo mayonnaise, honey, and balsamic vinegar in a bowl. Set aside dressing.
  2. Prepare a bowl of ice water. Fill pan with salted water and bring to a boil. Add broccoli and cook for 1 minute, then submerge into the ice water to stop the cooking. Dry the broccoli by patting it with paper towels and slice the florets into bite-size pieces. Put broccoli pieces in a serving bowl.
  3. Stir in raisins, almonds, and onion to the broccoli in the serving bowl. Pour the dressing and toss with the salad to coat well. Chill for 1 to 2 hours before serving.
  4. Toss again and serve cold.
