A healthy diet can still include your breakfast favorites, even waffles. These coconut waffles can be made ahead and kept in the refrigerator. When you're ready to eat, just stick them in the toaster. Top with fresh berries.

Ingredients:
- 8 farm fresh eggs
- 1/2 cup(s) grass-fed butter or coconut oil
- 1/2 cup(s) coconut flour
- 1 tablespoon(s) cinnamon
- 1 teaspoon(s) pure vanilla extract
- 1/2 teaspoon(s) salt
Instructions:
Crack eggs into a blender. Add all remaining ingredients. Blend until smooth.
Heat waffle iron. Spoon batter onto heated waffle iron and cook until light brown (about 3-4 minutes). Wrap in foil and keep in fridge.
These can be reheated in the toaster through the week. Serve with pure maple syrup and berries.
