Kale and Egg Omelette

Kale is one of the most nutritious greens.  Add additional chopped veggies to the omelette if you have any.

25 minutes

Ingredients:

  • 1 large head of kale (washed, de-ribbed, and torn into large pieces)
  • organic coconut oil
  • 8-10 eggs (whisked)
  • salt and pepper (to taste)

Instructions:

Heat oven to 350 degrees.

Place medium size skillet on stove over medium-high heat.  Add coconut oil to coat the pan.   Toss kale into skillet and cooking until it begins to wilt. 

Add the whisked eggs, salt and pepper to taste.  Stir the kale/egg mixture to distribute the kale throughout the eggs.  Place skillet in the oven and bake for 20 minutes, or until the eggs have set.   

Remove from oven and cool.  Cut into pie wedges and serve.
