Paleo Apple Muffins

These grain-free muffins make a great breakfast on-the-go.  They can be made ahead and frozen for later.

10 minutes

Cook Time:
20 minutes

Ready In:
30 minutes

Ingredients:

  • 1 ripe banana
  • 2 1/4 cup(s) almond meal
  • 4 eggs
  • 1 apple (grated)
  • 1/4 cup(s) organic coconut oil (melted)
  • 1/3 cup(s) water
  • 1/2 teaspoon(s) baking soda
  • 1 tablespoon(s) cinnamon

Instructions:

Preheat oven to 350 degrees.  Place banana in a bowl and mash with a fork.  Add the remaining ingredients and stir to combine. 

Line a muffin tin with paper liners, or grease individual cups with coconut oil.  Fill muffin cups ¾ full with the batter and bake for 15-20 minutes. 

Makes 15-16 muffins
