A good hearty stew is perfect for a wintertime meal with friends. Use leftover beef from the Smokey Roast recipe and leftover chopped veggies you happen to have hanging out in the fridge.

Ingredients:
- 1 large onion (diced)
- 1 clove(s) garlic
- 1 lbs beef stew meat (or leftover meat from Smokey Roast)
- 2 medium carrots (chopped)
- 6 oz beef stock
- 4 cup(s) canned tomatoes
- 5 oz red wine
- 1 teaspoon(s) dried oregano
- 1 teaspoon(s) dried basil
Instructions:
Soften onion and garlic in pot, add beef and allow to brown.
Add diced carrots, allow to soften slightly.
Add stock, canned tomatoes, red wine, oregano and basil. Put lid on and simmer on low heat for at least one hour.
