The traditional meatloaf recipe typically calls for bread crumbs, but this grain-free version uses a much cleaner almond meal. This recipe can easily be made a day ahead and kept in the refrigerator.

Ingredients:
- 2 lbs grass-fed beef
- 1 cup(s) almond meal
- 2 free-range eggs
- 4 oz tomato paste ((use ¾ of the 6 oz can—you will use the rest in the curry recipe))
- 1 red onion (diced)
- 3 clove(s) garlic (minced)
- 1 teaspoon(s) salt
- 1/2 cup(s) fresh basil (slivered)
- 1 teaspoon(s) ground black pepper
Instructions:
Heat oven to 350 degrees. Mix all ingredients together by hand in a large bowl.
Place meat mixture in a 9”x13” baking dish and form into a loaf. Bake for 45-60 minutes, or until internal temperature reaches 155-160 degrees.
