A great way to get more omega-3s in your diet and a little different way of preparing salmon.

Ingredients:
- 4 medium wild-caught salmon filets
- 8 green onion stalks (chopped)
- 4 eggs
- 1 cup(s) almond flour
- 2 lemons (juiced)
- Salt and pepper to taste
- 8 tablespoon(s) coconut oil
Instructions:
- Shred the salmon with a fork.
- Add the other ingredients and mix together.
- Form into cakes a bit smaller that the size of your palm.
- Heat the oil in the pan and place the cakes in.
- Saute on each side for 10 minutes or until browned.
- Place on a paper towel to cool and serve with fresh lemon
