Paleo Salmon Cakes

A great way to get more omega-3s in your diet and a little different way of preparing salmon. 

Prep Time:
10 Minutes

Cook Time:
20 Minutes

Ready In:
30 Minutes

Ingredients:

  • 4 medium wild-caught salmon filets
  • 8 green onion stalks (chopped)
  • 4 eggs
  • 1 cup(s) almond flour
  • 2 lemons (juiced)
  • Salt and pepper to taste
  • 8 tablespoon(s) coconut oil

Instructions:

  1. Shred the salmon with a fork.
  2. Add the other ingredients and mix together.
  3. Form into cakes a bit smaller that the size of your palm.
  4. Heat the oil in the pan and place the cakes in.
  5. Saute on each side for 10 minutes or until browned.
  6. Place on a paper towel to cool and serve with fresh lemon
