Pesto Chicken Skewers

The chicken is best when it has time to marinade in the pesto.  If you don't have time, grill the chicken skewers without the pesto.  Once they're done cooking, top with the pesto.  

Prep Time:
1 hour

Cook Time:
5-7 minutes

Ready In:
1 hour 15 minutes

Ingredients:

  • 1 cup(s) pesto
  • 10 boneless, skinless chicken thighs (cut into strips)

Instructions:

Place chicken pieces in gallon-size ziplock bag with 1/2 cup of pesto or enough to coat the chicken.  Save the remaining pesto for later.  Seal the bag tightly and refrigerate for at least 1 hour.

Thread the marinated chicken strips on to skewers. Grill over direct high heat until fully cooked, turning once (about 5-7 mins).  Top with remaining pesto.
