A healthy twist on traditional hash browns. The sweet potatoes add sweet side while the spices bring out a touch of savory. Great for breakfast or dinner!

Ingredients:
- 2-3 large sweet potatoes
- 2 tablespoon(s) extra-virgin olive oil
- 1/2 teaspoon(s) garlic powder
- 1/2 teaspoon(s) parsley flakes
- 1/2 teaspoon(s) onion powder
- 1/2 teaspoon(s) lemon pepper
- sea salt and pepper (to taste)
Instructions:
Peel the sweet potatoes and then grate them on a cheese grater.
Toss the gratings with the spices, salt and pepper. Heat the oil in a skillet over medium to medium-high heat. Add potatoes. Cook until the sweet potatoes are tender, stirring frequently.
*NOTE: if you want it to be done faster, you can cover the skillet with a lid for a few minutes to steam the potatoes.
