Spiced Chicken and Bruchetta

At first glance, there seems to be a lot of ingredients in this dish.  Reason being is that you are making a spice rub for your chicken.  The recipe for this rub makes enough rub for 8-12 chicken breasts.  If you’re only doing 4-5 breasts, just cut the recipe in half.  Or, you can make the whole recipe and place the rub in the cupboard for later use.  Just make sure the rub you are saving for later doesn’t come in contact with raw chicken! Any bruchetta dish reminds me of summer, when the basil is plentiful and the tomatoes are abundant and ripe.  This bruchetta is served over or alongside the chicken.  At our house, we place a handful of spring greens on a plate, place the cooked chicken breast over the greens, and then top it off with the bruchetta.

Ingredients:

  • 1 tablespoon(s) chili powder
  • 1 tablespoon(s) cumin
  • 1 tablespoon(s) ground coriander
  • 1 tablespoon(s) ground ginger
  • 1 tablespoon(s) brown sugar
  • 1 tablespoon(s) kosher salt
  • 1 teaspoon(s) garlic powder
  • 1 teaspoon(s) onion powder
  • 1 teaspoon(s) cinnamon
  • 1 teaspoon(s) fennel
  • 2 teaspoon(s) ground black pepper
  • 1/4 teaspoon(s) cayenne pepper (optional)
  • 4-5 bone-in, skin-on chicken breasts
  • 2 large tomatoes
  • 2-4 oz fresh mozzarella (cut into bite-sized pieces)
  • 3 tablespoon(s) fresh basil (slivered)
  • 2 green onions (chopped)
  • 1/2 tablespoon(s) minced garlic
  • 2 tablespoon(s) extra-virgin olive oil
  • salt and pepper to taste

Instructions:

For the chicken:

Place spice rub ingredients together in a bowl and stir to combine.  If you are saving some of this rub for later use, remove the portion to be saved at this point.  Loosen skin on chicken breasts and massage rub into chicken (under the skin).  Repeat this process with remaining chicken breasts.  Place prepared chicken breasts in baking dish and bake in oven at 350 degrees for 35-40 minutes or until internal temperature of chicken reaches 165 degrees.  Remove from oven and allow to rest 10 minutes before serving.

For the bruschetta:

Combine tomatoes, basil, green onions, garlic , olive oil and salt and pepper.  Top chicken with tomato mixture.  Grill an additional 8 minutes or until chicken is cooked through.
