  • Crock Pot Chicken Curry and Vegetables

There's nothing better than throwing some ingredients in a crockpot and leaving it alone for 5 hours, just to come home to a healthy delicious meal and a nice smelling kitchen.  Curry is a wonderful Indian dish that brings incredible nutritional value to the table.

  • Lemon Dill Chicken Skewers

A super quick and easy chicken recipe.  Pair these skewers with fresh berries and grilled asparagus or a greens salad.  This is a nice recipe if you're cooking for a large group.  The skewers can be prepped a day ahead and kept in the refrigerator until time to grill.

  • Salmon Salad

A great salad when you have leftover salmon from the night before.  If you don't, just saute a couple wild-caught filets and season with olive oil and salt and pepper.  This recipe is high in omega-3 fatty acids and antioxidants.  A great meal without the inflammatory grains.

  • Steamed Broccoli

A simple way to eat your green vegetables.  Play around with different seasoning flavors.  We like lemon juice, garlic, or just a drizzle of olive oil with salt and pepper.

  • Power Plant Smoothie

Don't let the word "plant" scare you.  This smoothie has enough sweetness with the coconut milk and blueberries to keep you happy, and it is loaded with antioxidants and nutrients to get your day started off just right.

  • One Pot Chicken Drumsticks

Anytime you can minimize the clean up in the kitchen and keep dinner in one pan, I'm in!  This dish is packed with protein and vegetables and can be customized based on what vegetables you have on hand.

  • Kale Salad

For many people, kale is not their favorite green vegetable.  It has a strong flavor, but combined with the roasted walnuts, feta and mildly sweet dressing, it will soon become a favorite.

  • Creamy Chicken Tomato Soup

I love the one-pot dinners where you toss in all the ingredients, cook and serve.  This recipe can be made ahead and frozen for later.  Serve with a kale salad or steamed veggies.

  • Cinnamon Apples

This is the perfect paleo dessert with just the right amount of sweetness and without the sugar.

  • Pork and Cabbage Saute

The cabbage in this recipe cooks down almost to a "noodle" consistency.  It's a wonderful recipe and a great substitute for a pasta dish.
