Avocado Bacon Omelettes

Forget the dry toast, this hearty breakfast will ensure your morning isn't disrupted by a grumbling belly. With lots of good fat from the avocados and protein from the eggs and bacon, a little goes a long way. Make it once and eat it for the next couple of mornings.

Ingredients:

  • 12 slice(s) bacon
  • 3 avocados
  • 6 tablespoon(s) minced red onion
  • 3 tablespoon(s) minced fresh cilantro
  • 3 dash hot sauce
  • 12 eggs

Instructions:

  1. Cook bacon until crisp.
  2. While bacon is cooking, whack your avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it up, but not too fine—a little texture is nice.
  3. Add onion and cilantro to avocado. When the bacon is done, drain it and crumble or snip it in, too. Stir it all up.
  4. Now make your omelets, one at a time. Use half the avocado mixture in each. Top with more hot sauce, if desired.
