Carrot, Kale and Bacon Saute

A crowd pleaser that makes for a nice and colorful side dish.

Ingredients:

  • 1 head(s) organic kale
  • 1/2 lbs bacon (cooked)
  • 4 medium carrots
  • 3 tablespoon(s) coconut oil
  • 5 clove(s) crushed garlic
  • 1 small leek onion (chopped)

Instructions:

  1. Boil some salted water and either steam or boil the carrots for about 10 minutes or until tender.
  2. While the carrots are cooking prep your Kale.
  3. Grab the stem and pull away from your hand removing the thick part of the stem, give it a wash and set aside.
  4. Melt the coconut oil in a large saucepan and add the garlic and leeks.
  5. Sautee for about 5 minutes to soften.
  6. Add the Kale and sautee for 5 minutes.
  7. Add the bacon and carrots, toss together and serve!
