Paleo Cranberry Spinach Salad

This is one of our favorites! It makes for a great go-to lunch option and the possibilities for toppings are endless. Be creative!

Ingredients:

  • 1/2 lbs spinach
  • 1 boneless organic chicken breast
  • 1/4 cup(s) unsalted cashews
  • 1/2 cup(s) dried cranberries
  • 1/2 cup(s) shredded carrots
  • 2 teaspoon(s) toasted sesame seeds
  • 1 teaspoon(s) coconut oil
  • 1/2 cup(s) olive oil
  • 1 tablespoon(s) balsamic vinegar

Instructions:

  1. Preheat skillet with coconut oil
  2. Over medium heat cook in skillet chicken breast.
  3. Once cooled down slice chicken into strips
  4. In a medium bowl whisk together olive oil, balsamic vinegar, sesame seeds
  5. Add spinach to a large bowl add cranberries and cashews
  6. Mix everything together and Enjoy!
