This recipe is kid-friendly and quick, especially if you've prepped the meat and chopped the veggies ahead of time. This works well as a weeknight meal when you're in the mood for comfort food. Add extra leftover veggies and herbs if you have them.

Ingredients:
- 2-3 yellow squash
- extra-virgin olive oil
- sausage/veggie mixture leftover from egg cups
- marinara sauce
- Salt, pepper, garlic, dried oregano, basil (to taste)
Instructions:
Wash yellow squash. Using a box cheese grater or a julienne peeler, shred the yellow squash in long strands, similar to spaghetti.
Heat olive oil in large pan over medium high heat. Add shredded squash and sauté 3-4 minutes, seasoning with salt and pepper.
Add the leftover, sausage and veggie mixture and marinara sauce. Cook until warmed through. Add seasonings of your choice to taste.
