Who doesn't love mashed potatoes? Unfortunately, the carb load is pretty high. This "mash" is similar but so much better for you. It's a great quick side dish for any meal.

Ingredients:
- 1 lbs parsnips (peeled and cubed)
- 1/2 lbs turnips (peeled and cubed)
- 1/2 cup(s) chicken broth
- 3 tablespoon(s) butter or ghee
- 1/2 teaspoon(s) sea salt
- 1/4 teaspoon(s) dried thyme
- pinch cracked pepper
Instructions:
- Fill a pot with cold water and add the parsnips and turnips. Bring to a boil, then partially cover and cook for 15 minutes, until fork tender.
- Drain the vegetables then transfer to a food processor.
- Add the chicken broth, butter, sea salt, thyme, and pepper. Puree until smooth.
