  • Powerhouse Salad for One

    This is one filling and delicious salad, packed with good fats, protein and nutrients.  This is one of my favorite on-the-go lunches.

    An easy cool weather recipe for those nights when you want something warm and hearty. If you've had a hard time getting kale into your diet, this is a great recipe to introduce it.  The other flavors balance the kale and provide a mild but rich flavor.

    Chicken wings are a favorite especially when football season rolls around.  Unfortunately it's hard to find a healthy version at the local bar, but we've found a great recipe that you can make at home.  These are easy and you can use the grill or oven.

    A roasted chicken is so versatile.  Eat fresh from the oven or chop it up and make it into a chicken salad or fajitas.  There are so many options.  Make this mid-week so you have plenty of leftovers to get you through several more meals. 

  • Walnut Crusted Chicken with Steamed Broccoli

    With very few ingredients and a short amount of cooking time, this is a great recipe to have on hand.  Combine this with a spinach salad or freshly steamed broccoli.  The leftovers make for a great salad the next day.  If possible, use organic free-range chicken and raw walnuts....

    Cast iron skillets work best for this fritatta, use whatever meat you have on hand.  This is also even more delicious the next day so go ahead and make it the night before.  Play around with a variety of vegetables.  This is a great way to start your day with lots of nutrients.
